Raspberry Chia Jam – sugar free

This is sooo easy! Just:

  1. Grab a cup of raspberries  and mash well or use stick blender for a smoother consistency.
  2. Mix through about 2 teaspoons chia seeds and voila!!!
  3. Pop in fridge and it will last around a week (I use half batch so as not to waste)

I have weaned myself off sugar so everything tastes better and I don’t need to have things super sweet anymore but if you are not quite there with your tastebuds then add a medjool date, softened in a little boiling water then blended with raspberries, you may need to add more chia seeds if it is too liquid – use blueberries and/or strawberries* (they’re not so tart).

This goes absolutely perfectly with my GF, DF banana pancakes (made with egg, banana and Fibergy)….. and when I finally remember… my probiotic (it tastes sweet!) sprinkled over is the most un-guilty, good for you breakfast or treat to have with a cuppa

* Strawberries are #1 on the dirty dozen list, having (some testing for over 30 pesticides!!). Try to source organic, or at the very least wash them properly They are easy and fun to grow “without pesticides” and are great in pots if you have little space,
