Roast pumpkin and guacamole Salad

I always like to find ways to use up leftovers. This lunch was particularly yummy, with Connor’s leftover avocado guacamole

This is my approximate amounts, please change to your liking

  • Bunch rocket and baby spinach
  • 1/8 cup roast pumpkin
  • 1/4 red onion sliced thinly
  • 10 pecans
  • 1Tbls goats cheese torn or cut into small pieces (optional)


  • 1/2 avocado
  • 1/8 red onion
  • 4 slices jar jalapenoes
  • handful coriander
  • 1/2 lime juiced

Mash together and add to the salad…. yummmmmmy!!
