Creamy Healthy Salad Dressing
I love avocado, so much so that I can’t resist having it chopped up in most of my salads.
Today I found a poor old, less than perfect avo at the back of the fridge so it was a good chance to experiment.
You know I don’t do complicated recipes – only 4 ingredients but it is simply divine creamy and decadant, but instead of some sugar, preservative and additive laden store bought dressing this has the “good fats” you need.

- 1 tsp cashew butter
- Hot water
- 1 tsp MCT oil
- 1/2 avocado
- 1 tsp tamari (gluten free soy sauce)
- pepper to taste
- Whizz all together!
or if you are like me and too lazy to wash the blender just:
- Add 2Tbs hot water to cashew butter and mash to soften (in bowl or open cup)
- add rest of ingredients and mash until smooth
- add more water to achieve desired consistancy
