Asparagus Quiche with sweet potato crust GF

This is one of my favourite GF dishes. Sweet potato works so well as a crust, you can change asparagus to whatever ingredient you like (tomato and basil is lovely too!)

Ingredients 

  • 1 large sweet potato
  • dash olive oil
  • 1/2 brown onion chopped or 1 leek sliced finely
  • 1-2 sprigs thyme stem removed
  • 1 clove garlic crushed
  • bunch asparagus chopped
  • 6-8 eggs
  • 1/2 cup goats cheese or fetta
  • salt and pepper
  • option of adding parmesan or chopped bacon/pancetta for extra flavour
Method
  1. Use mandalay to thinly slice sweet potato lengthways
  2. Cook on grill press, or oiled frypan until soft and pliable and a little browned
  3. Layer in quiche dish, overlapping slices
  4. Sauté onion and lower part of asparagus until just soft (and bacon if choosing)
  5. Add garlic, thyme and asparagus tips and sauté for about 30 seconds and remove from heat
  6. Whisk eggs (with 1/2 cup cream/milk/nut milk if to go further if desired)
  7. Crumble in cheese and onion mixture
  8. Add a good pinch of salt and pepper (or msg-free stock powder)
  9. Pour mixture into sweet potato case
  10. Cook in moderate oven for 20-30 minutes or until set
  11. Serve with salad of choice (I like baked grape tomatoes with this)
