Roast pumpkin and guacamole Salad
I always like to find ways to use up leftovers. This lunch was particularly yummy, with Connor’s leftover avocado guacamole
This is my approximate amounts, please change to your liking
- Bunch rocket and baby spinach
- 1/8 cup roast pumpkin
- 1/4 red onion sliced thinly
- 10 pecans
- 1Tbls goats cheese torn or cut into small pieces (optional)
Guacamole
- 1/2 avocado
- 1/8 red onion
- 4 slices jar jalapenoes
- handful coriander
- 1/2 lime juiced
Mash together and add to the salad…. yummmmmmy!!
