Mexican Eggs

This is Connor”s (uncle Con Con’s Mexican Eggs as he likes it to be known) specialty and really, it’s actually quite healthy (protein from eggs and mince, and lots of goodness from black beans, tomatoes and avocado)….and it is so yummy!!

He browns up some mince (well actually he likes chorizo but I think mince is just as good and healthier), adds a can of crushed tomatoes or chopped fresh tomatoes with a sprinkle of onion salt, garlic salt (or you can sauté real stuff with the mince), cayenne pepper, cumin and coriander to taste, about 2 Tbls sirachi or habernero sauce and 1/2 can black beans. Then he “chucks a couple of eggs on top, sprinkles some cheese and closes the lid for a bit, and it’s good to go”.

It’s beautiful having the eggs a little runny then adding some mashed avocado on top
