You might find it hard to believe but it is amazing how well this disguises as mashed potato. Pleaaasse give it a go and see if you can really tell the difference.
- Steam approx 6 cauliflower florets to 2 cloves garlic until very tender… You can roast the garlic in an alfoil pouch for about 30 minutes but I find steaming so simple and tastes perfect
- Drain the cauliflower and garlic and mash using a potato masher or fork … For a smoother consistency you can blend half the mixture
- Add 1 tbs butter (optional) and 1 tbsp chopped chives
- Season with salt and pepper and mix well
