Low Sugar Gluten Free Macadamia Flapjacks
- 1 cup macadamias
- 1/2 cup cashews
- 1/2 cup coconut flakes
- 1/2 cup protein powder
- 1/2 tsp salt
- 1 cup rolled oats
- 1/2 cup quinoa flakes
- 1/2 cup coconut oil (or butter)
- 2 apples
- 10 medjool dates
- 2 Tbsp flax seeds
- 1/4 cup honey to taste (optional only)
- 1 tsp vanilla
- pinch stevia to taste
- 1 egg or more if mixture is too dry
- extra nuts ans seeds for top
- Soak oats & quinoa in a little coconut water, coconut milk, milk or water
- Chop nuts to your liking (keep a few chunky ones for top)
- Chop and seed apples and stew with dates until tender (I use thermomix but just saucepans will do),
- Add flax seeds, then coconut oil and blend until smooth
- Mix through oats, protein and flakes
- Mix through other ingredients (egg/s if needed) and blend together
- press into tin
- Bake in 150 degrees c until golden
- Cut while warm
