Healthy pancakes GF DF

I am a health freak I admit it! But that doesn’t mean I don’t have yummy food. My morning, arvo or anytime treat is as healthy as you can get, no guilt required!


  • 1 egg
  • 1/2 banana
  • 1 tbsp Usana Fibergy (this thickens the batter & adds vital fibre to my day without even being noticed
  • cinnamon (optional)
  • small dob grass fed butter ***
  • handful organic raspberries and or blueberries or strawberries


  1. Blend egg, banana and Fibergy (cinnamon if desired) together (I use a whiz stick)
  2. heat ceramic pan on medium **
  3. add 1/2 dob butter
  4. drop batter to make two pancakes
  5. I add the dozen blueberries and raspberries to the cooling pan to warm them up and add dob of organic yoghurt ……yummmmm!!!!

additional notes:

  • I’ve learnt it’s easier and less messy to have some sugar free raspberry chia jam on hand…. so easy!
  • I also find sprinkling my probiotic over the top is like dusting with icing sugar but “good” for me!!!!

** Studies have shown the polytetrafluoroethylene (PTFE) coating on the non stick pans turns into toxic Perfluorooctanoic acid (PFOA) at high heat, which is linked to thyroid disease, infertility, and developmental and reproductive problems.

*** Recent info has shown grass fed butter is not “bad” and in moderation can actually a much healthier option to margarine. Grass fed butter has higher omega 3 (the good anti oxidant fat we are mostly deficient in) content compared to omega 6 in butter form grain fed cows.  Harvard study… “The older margarines had high levels of trans fats that packed a double whammy for heart disease by raising levels of LDL (bad cholesterol) and lowering levels of HDL (good cholesterol).”
