Vietnamese Chicken Salad

 This is a great, easy summer salad
Ingredients  

(as usual – I am just guessing the amounts here)

  • 1 chicken breast *

  • !/2 chinese cabbage
  • Handful of mint
  • Handful of coriander
  • 1/3 cup peanuts
  • Handful snow pea sprouts
  • ½ red onion finley sliced
  • 1-2 red chillies
  • 1/3 red capsicum
  • Thin noodles cut into shorter lengths ** optional
  • ½ tspn sesame seed oil
  • 2 Tbspns apple cider vinegar
Method
  • Cook chicken how you prefer or buy free range bbq chicken * I always like to poach my chicken (I add extra breast for later salads) preferably with chopped onion, carrot and celery – I keep the liquid as soup (it nearly always gets drunk before I get it to the freezer)..yum!
  • shred cooled chicken
  • thinly slice (mandalin is great) all vegies
  • mix vinegar and sesame oil for dressing
  • mix all ingredients in bowl and enoy!!

** I love these noodles, found them on one of my health section trolls….
Konjac is a vegetable, the noodles are gluten free, low or no calorie, carbs, fat or sugar.. Taste like rice noodles (rinse in cold water first)
