Mexican stuffed Capsicum

This is such a yummy meat free recipe, it’s one of my favourite 7 Day Detox (see below) recipes

  • 2 large capsicums, cut in half and seeds removedimg_4436
  • ½ cup uncooked quinoa
  • 1 cup water or chicken bone broth
  • Zest from one lime
  • Juice from one lime
  • ¼ cup fresh coriander, finely chopped
  • 1 Tbs olive oil
  • ¼ of a red onion, finely chopped
  • ½ of a jalapeño, ribbed and seeded
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 1 can of black beans, drained and rinsed
  • 1 can of corn, drained
  • ½ Tbs taco seasoning
  • Shredded cheese or avocado slices to top the peppers
  • Avocado salsa (chopped avocado, cucumber, tomato, red onion and coriander)
  1. Bring quinoa and water (or stock) to a boil in a medium sized saucepan, reduce heat to low and simmer with lid for approximately 15 minutes or until all of the liquid has been absorbed by the quinoa.
  2. Meanwhile gently sauté onion and garlic until soft
  3. Add corn, black beans and seasoning and simmer for 5-10 minutes, add a little water if drying out
  4. Mash black beans a little with fork
  5. Add quinoa and mix well
  6. Stir in lime zest, lime juice, and chopped coriander
  7. Stuff capsicum
  8. Bake in moderate oven for about 30-40 minutes until capsicums are soft
  9. Serve with avocado salsa
  10. Optional – Dollop of natural yoghurt (no added sugar) **


Most shop bought taco seasoning is surprisingly free of usual baddies (always check the label), but it’s easy to make your own that tastes exactly the same and can be stored easily.

Homemade Taco seasoning

  • 1 Tbs chili powder
  • 1 ½ tsp ground cumin
  • 1 tsp garlic salt
  • ½ tsp paprika
  • ½ tsp red pepper flakes
  • ¼ tsp cayenne pepper
  • ¼ tsp onion powder
  • ¼ tsp oregano

Combine all ingredients in a zip-lock bag, small canning jar, or any other airtight container, shake up ingredients until they’re mixed.
