Mexican stuffed Capsicum

This is such a yummy meat free recipe, it’s one of my favourite recipes from my  10 Day Cleanse (see below)

Ingredients:
  • 2 large capsicums, cut in half and seeds removedimg_4436
  • ½ cup uncooked quinoa (*or black rice)
  • 1 cup water or chicken bone broth
  • Zest from one lime
  • Juice from one lime
  • ¼ cup fresh coriander, finely chopped
  • 1 Tbs olive oil
  • ¼ of a red onion, finely chopped
  • ½ of a jalapeño, ribbed and seeded
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 1 can of black beans, drained and rinsed
  • 1 can of corn, drained
  • ½ Tbs taco seasoning
  • Grated cheese
  • Avocado salsa (chopped avocado, cucumber, tomato, red onion and coriander)
  • sour cream, coconut yoghurt or greek yoghurt – optional
Method
  1. Bring quinoa and water (or stock) to a boil in a medium sized saucepan, reduce heat  and simmer with lid for approximately 15 minutes or until all of the liquid has been absorbed.
  2. Meanwhile gently sauté onion and garlic until soft
  3. Mash black beans a little with a fork
  4. Add corn, black beans, a splash of water and seasoning and simmer for 5-10 minutes, add a little water if drying out
  5. Mix in quinoa
  6. Stir in lime zest, lime juice, and chopped coriander
  7. Stuff the capsicums
  8. Bake in moderate oven for about 30-40 minutes until capsicums are soft
  9. Serve with avocado salsa
  10. Optional – Dollop of natural yoghurt (no added sugar) **

Most shop bought taco seasoning is surprisingly free of usual baddies (always check the label), but it’s easy to make your own that tastes exactly the same and can be stored easily.

Homemade Taco seasoning

  • 1 Tbs chili powder
  • 1 ½ tsp ground cumin
  • 1 tsp garlic salt
  • ½ tsp paprika
  • ½ tsp red pepper flakes
  • ¼ tsp cayenne pepper
  • ¼ tsp onion powder
  • ¼ tsp oregano

Combine all ingredients in a zip-lock bag, small canning jar, or any other airtight container, shake up ingredients until they’re mixed.

Always make enough for leftovers!!!

Leftovers Salad

This salad was quick, easy and delicious!

  • leftover stuffed capsicum (*ran out of quinoa so I used black rice instead)
  • any salad you have in fridge – I used cucumber, tomato, rocket, red onion, sundried tomato
  • avocado for good fat (and yumminess!!!)
  • heaps of coriander (yum!)
  • fetta, chicken, mince or even egg for protein
  • another splash of siracha chilli sauce
