Low Sugar Gluten Free Macadamia Flapjacks

  • 1 cup macadamias
  • 1/2 cup cashews
  • 1/2 cup coconut flakes
  • 1/2 cup protein powder
  • 1/2 tsp salt
  • 1 cup rolled oats
  • 1/2 cup quinoa flakes
  • 1/2 cup coconut oil (or butter)
  • 2 apples
  • 10 medjool dates
  • 2 Tbsp flax seeds
  • 1/4 cup honey to taste (optional only)
  • 1 tsp vanilla
  • pinch stevia to taste
  • 1 egg or more if mixture is too dry
  • extra nuts ans seeds for top
  1. Soak oats & quinoa in a little coconut water, coconut milk, milk or water
  2. Chop nuts to your liking (keep a few chunky ones for top)
  3. Chop and seed apples and stew with dates until tender (I use thermomix but just saucepans will do),
  4. Add flax seeds, then coconut oil and blend until smooth
  5. Mix through oats, protein and flakes
  6. Mix through other ingredients  (egg/s if needed) and blend together
  7. press into tin
  8. Bake in 150 degrees c until golden
  9. Cut while warm
