Chicken Puttanesca Zoodles

Here is one of the recipes I have included in my 7 Day Detox winter menu, it’s become of my favourite meals as it is so quick and easy, healthy and tasty.

Have you tried zoodles? They are sooo good, I hardly ever feel the need for spaghetti these days, zucchini noodles really are unnoticeable to me. I scored a great Spiraliser on special for $30 in the June sales and it makes spiralling vegies so easy.

  • 1 chicken breast or tenderloins (optional)
  • 1 Tbsp olive oil
  • 1 onion sliced
  • 1 clove garlic crushed
  • 1 tsp capers
  • 1 bunch parsley (sometimes I use basil)
  • 1-2 red chillies to taste
  • 1 tin crushed tomatoes
  • 1/2 cup black olives pitted and halved
  • 2 zucchinis spiralled
  • Salt and pepper to taste
  1. Slice breast thinly
  2. Sauté onion until soft, add garlic and chilli until fragrant, remove
  3. Sauté chicken until golden
  4. Return onion mixture, tomatoes, capers, parsley and olives
  5. Simmer for 5 minutes
  6. Season to taste
  7. Add zucchini noodles and gently stir until warmed through
  8. Serve with parmesan cheese (if not doing dairy free)

July 10th is my last Group Detox for winter. It will then be available to do whenever anyone wants to do it privately. I can honestly say is bloody good value considering the time, energy and love I have put into it, and the great results and testimonials that have come from it.
