Cauliflower rice Sushi

img_4556These are one of my favourite for 5pm TGIF Friday pickies… I love them!!! and they are verrrry healthy 😉

I am showing both the long version and the quick version – to tell the truth the quick version is just as good!

Ingredients

  • 1/4 cauliflower broken into florets
  • 1 small onion, diced 
  • 1 teaspoon coconut oil 
  • 1 tablspn nutritional yeast
  • 1 teaspoon tahini
  • 1 tablspn rice vinegarimg_4550
  • 4 sheets of nori
  • 2 radishes
  • 1 small carrot
  • 1/2 cucumber
  • 1/2 avocado
  • 1 chicken thigh cooked in teriyaki marinade (or any cooked chicken, tuna, tofu etc)
  • 1 spring onion
  • 1 – 2 teaspoons organic Tamari sauce (or soy sauce)
  • pickled ginger
  • wasabi

Instructions

  • Process cauliflower until it looks like the size of rice
  • Saute cauliflower, onion, coconut oil, nutritional yeast and tahini until tender (or just steam cauliflower)
  • Mix through rice vinegar and let cool
  • Cook chicken and cool (or just shred cooked chicken finely)

  • Julienne Vegetables
  • Spread a little wasabi on nori sheets (optional)
  • Spread cooled rice on nori sheets
  • layer with chicken and vegetables (plus whatever else you like) and roll tightly
