Cauliflower rice Sushi
These are one of my favourite for 5pm TGIF Friday pickies… I love them!!! and they are verrrry healthy 😉
I am showing both the long version and the quick version – to tell the truth the quick version is just as good!
Ingredients
- 1/4 cauliflower broken into florets
- 1 small onion, diced
- 1 teaspoon coconut oil
- 1 tablspn nutritional yeast
- 1 teaspoon tahini
- 1 tablspn rice vinegar
- 4 sheets of nori
- 2 radishes
- 1 small carrot
- 1/2 cucumber
- 1/2 avocado
- 1 chicken thigh cooked in teriyaki marinade (or any cooked chicken, tuna, tofu etc)
- 1 spring onion
- 1 – 2 teaspoons organic Tamari sauce (or soy sauce)
- pickled ginger
- wasabi
Instructions
- Process cauliflower until it looks like the size of rice
- Saute cauliflower, onion, coconut oil, nutritional yeast and tahini until tender (or just steam cauliflower)
- Mix through rice vinegar and let cool
- Cook chicken and cool (or just shred cooked chicken finely)
- Julienne Vegetables
- Spread a little wasabi on nori sheets (optional)
- Spread cooled rice on nori sheets
- layer with chicken and vegetables (plus whatever else you like) and roll tightly
