Oats with a protein and fat boost

Well Perth today is wet and wild. It’s a porridge and soup kind of day.

I haven’t had rolled oats for ages, I choose to eat very few carbs these days and although I love them I find rolled oats makes me feel a little “blah”. I am a big advocate of protein and good fat to start the day so when I came across a recipe which included whisking an egg into the oats – I gave it a go. Yum!!! it’s a really warming and filling breakfast without being too heavy.

I also don’t use any sugars these days – you really can change your tastebuds (you are welcome to try my free 5 day quit sugar guide below to get you started). Sometimes I use fruit to add flavour and a little sweetness. Today I wanted to go one further and add some fat so I added a teaspoon of cashew butter (which is delicious and kind of sweet in itself). A few nuts for extra nutrition and I’m set for they morning!

Ingredients

  • ⅓ cup oats
  • ⅔ cup coconut milk or water
  • ¼ teaspn cinnamon
  • dash nutmeg
  • sprinkle sea salt
  • 1 egg slightly beaten
  • ¼ teaspn vanilla extract
  • berries, banana or whatever your favourite fruit is
  • cashew or almond butter
  • fruit of choice

 

Method

  • Bring water, oats, spices and sea salt to a boil in a small saucepan
  • Simmer for a few minutes until cooked, stir often to prevent sticking
  • Add more milk if necessary to make it quite runny as it will all thicken with added egg
  • Mix in vanilla and egg
  • Stir vigorously for 2 to 3 minutes or until oats are fluffy.
  • Turn off heat and sit, covered for about 5 minutes
  • Serve with warmed favourite fruit, nut butter and optional nuts
