Cauliflower Tots

Cauliflower Tots   GF

These are a great yummy alternative to greasy (with trans fats, additives, flavourings!) packaged potato gems or chips

 Ingredients:
·  2 cups cauliflower or broccoli florets
·  2 eggs
·  1/2 cup onion, finely chopped
·  clove garlic, minced
·  1 teaspoon organic mustard
·  3 tbsn fresh parsley, finely chopped
·  1/4 cup grated cheddar cheese
·  1/4 cup grated parmesan 
·  salt and pepper to taste
 
Directions:
  • Preheat oven to 400°C
  • prepare oven tray with baking paper
  • Steam  florets for 4 to 5 minutes or until tender but not mushy, then drain really well and dry on paper towel
  • Finely chop cauliflower/brocoli
  • Combine all of the ingredients and season with salt and pepper to taste (I always add some Fibergy to thicken if needed)
  • Roll into short sausages and place on tray
  • Bake for 20 min or until golden
